- Zest and juice of 2 Clemantine
- Zest of 1 Lemon
- Zest of 1 Lime
- 200g Brown Sugar
- 6 Dried Cloves
- 1 whole Nutmeg
- 1 Vanilla Pod
- 2 Star Anise
- 2 bottles Red Wine
This is fairly simple, you don’t need to rush this, but simply combine all ingredients into a large pan and put on the head. Twist the zests of the fruit and drop them in and grate the nutmeg over the pot.
Don’t let this boil, and keep stirring until the sugar has dissolved. It’s best to sieve out all the garnish ingredients, so you can enjoy your cocktail without picking bits out, but is fantastic when done. The longer you leave the ingredients in, the more they will infuse for that rich christmasy flavour.
Of course if you have your own favourite spices around christmas time, then feel free to add or remove your favourites. This is one for really warming up with and enjoying.
